I am having company next week and I could really use some new chicken recipes! I have been making the same few for the last two or three years and I have definately over-used them with my family! Nothing too spicey and no curry (my husband won’t touch curry!). Thank you so much!!!!

This is one of my all time favorite recipies. It’s by no means boring and is not too spicy or complicated to make either!
INGREDIENTS:
1 fresh, ripe mango
1/2 red onion, finely diced
1 bunch cilantro, finely chopped
1/2 green bell pepper, minced
1 fresh red chile pepper, seeded and chopped
4 skinless, boneless chicken breasts
1 egg
1/4 cup milk
1 cup dried bread crumbs
1/4 cup olive oil
1 sprig fresh cilantro, for garnish
TO MAKE SALSA: In a small bowl, combine the mango, onion, cilantro, green bell pepper and red chile pepper. Put aside until serving time.
Lightly pound the chicken breasts with a mallet to flatten. Beat the egg and milk together. Then coat them in the egg/milk mixture then the breadcrumbs. Chill for 1/2 hour.
Saute the chicken in olive oil until cooked through and juices run clear. Drain and serve with the mango salsa. Garnish with cilantro leaves.

I make chicken with gorgonzola and hazelnuts on top and baked in the oven. Sounds weird but is really good!! Very easy just put cheese and nuts on top and bake until done, I think I also used poultry seasoning and the little dried onion bits you find in the spice aisle. I made it once with bacon bits on top too, my boyfriend really liked it.

1. Pour marinara sauce over the chicken and put slices of mozzerella cheese on top. Bake at 350.
2. Buy a marinade at the store or marinade in Italian dressing. Bake at 350.
3. Mix powdered ranch dressing mix with bread crumbs and use that as fried chicken coating. Fry.
4. Put fresh basil, garlic, and sliced lemons on top of the chicken. Put some water in the pan and cover with aluminum foil and bake.

Chicken Katzu
put some garlic n pepper onto the boneless chicken n put it for a while, about 15 min..then put it to the white part of an egg then put it to tempura flour or bread crumbs until its covered with it…u can do it twice if u want it to be crispy..then fried it in deep oil until its gold…eat it with chilly sauce or other dressing like barbeque sauce..delicious n very simple…
u can put it in the fridge bfore it’s fried…so u can make a lot then put it in the fridge just for savings…

Chicken Spaghetti (sounds gross, but is really good)
1. Boil chicken breasts in water. Add salt, pepper, celery seed and minced onion to water – just to season. Bring water to boil and add chicken breasts. I usually use 4 boneless breasts for a nice sized casserole that would easily feed 4-6 people. Boil for about 1 hr.
2. Remove chicken from water. Set aside.
Boil Fettuccine noddles in same water that chicken was boiled in.
3. Saute 1-2 yellow onion and 1-2 green bell peppers in a frying pan. Can add a little fresh garlic for flavor.
4. In a mixing bowl, mix 1-2 cans of Cream of Chicken Soup with 1 can of diced tomatoes.
5. Layer casserole dish with noodles. Do not strain, just scoop out of water, retaining the stock.
6. Cut chicken into bite sized pieces, or shred chicken. Layer chicken over noodles.
7. Pour 2 cups of the chicken stock over the chicken and noodles.
8. Layer with either Shredded Cheddar Cheese, or mixed Cheddar and Jack cheese blend. Just enough to layer, about 1/2 cup.
9. Pour soup mix over cheese.
10. Layer with more cheese, about 1/2 cup
11. I usually prepare this the night before, so all flavors sink throughout the dish. But you can bake right away.
12. Bake uncovered at 350 for 1 hr.
Serve with garlic bread and nice salad, caesar salad goes great.
