I like my chicken wings. I mix rice flour, japanese curry powder, salt, pepper, onion and garlic powder and sugar, I coat the wings in this mixture, spray with canola oil and bake until crispy golden brown.
Go to foodnetwork.com and look up fried chicken and choose the recipe from paula deen. This recipe has hot sauce in it.
I also like making roasted whole chicken with lemon slices, rosemary, and cracked pepper. Just put the spices under and on top of the skin for the best flavor. Make sure you put about an inch or so of water in the bottom of the roaster pan and cook covered.
Butterfly bonless skinless chicken breast halves. Sprinkle on some fresh basil, roll up with a slice of swiss and a thin slice of ham and anchor it with toothpicks. Brown it in a skillet with some olive oil, then bake 30-40 minutes depending upon thickness.
Serve with veggies and red potatoes roasted in olive oil, fresh basil and fresh rosemary.
I mix half mayo and half mustard and coat chicken pieces and roll in bread crumbs, put in a pan sprayed with cooking spray, spray lightly on top, and bake at 350 until done- depending on the pieces, or if boneless.
You can change this up easily- use italian bread crumbs, add parmesan cheese, and serve with spaghetti and tomato sauce.
Add cajun spice and tabasco and serve with beans and rice
Or come up with your own- a very versatile recipe.
Boneless chicken put in a roasting pan add can of mushroom soup or celery soup mixed with a cup of milk.. back at 350 for about 45 minutes.. good stuff.
heres a really good easy one that my friends used to beg me for heres what you need:
1 lb. of boneless skinless chicken breasts
2 cups of white rice
1 can of chicken broth
2 cups of broccoli florets (fresh is best)
1 block of velveeta cheese (the bigger one)
2 tblsp of oil
–preheat oil. while the oil is warming up, cut up chicken into bite size chunks.
–cook chicken until it is browned on all sides. then take all other ingredients and put them into the pan. turn down heat to low and cover; let cook for about 20 minutes. that’s it!
oh, and make sure you use a pan that’s pretty deep with a nice fitting lid because it makes a good size portion.
enjoy!
