    2 tbsp olive oil
    4 x Portobello mushrooms, sliced
    1 cup of shiitake mushrooms, chopped
    2 x onions, chopped
    2 cloves of garlic, minced
    1/2 cup brown rice
    1/2 cup bulgar
    2 cups of water
    2 tbsp of soya sauce
    1 x bay leaf
    2 x eggs
    1 block of firm tofu
    2 tbsp of Miso paste
    1 cup of breadcrumbs
    Salt and pepper

    Directions:
    Veggie Burgers
    Heat a saucepot over medium-high heat and add oil. When hot, add mushrooms, onions and garlic. Sauté until the mushrooms lose their moisture and onions begin to caramelize. Add rice, bulgar, water, soya sauce and bay leaf. Cover with a lid and cook until the grains have absorbed all the liquid. Let mixture cool.
    Place mushroom and rice mixture into the bowl of a food processor. Add eggs, tofu, Miso paste and breadcrumbs and seasoning. Puree until smooth.
    Form into patties and refrigerate until firm. Fry over medium high heat until golden and cooked through.

    Wonder made them from lentil beans before….. take my word for it: Boca Burgers are better than homemade.
    Also: the veggie “chicken” burgers are yum-yum-yummalicious. :)

  3. I’ve only ever done black bean burgers, and they’re delicious! Just get some black beans…mush them up with onions, garlic, salt, wheat flour, whatever you really wanna put in…but make sure you at least have the beans and flour..and I must say onions are a must for me. then you put some oil in a pan and roll some mix up and cook it basically like you would a regular burger…carefully flip them a few times, and then serve them on whole wheat bread. amazing=]

  4. A veg*an burger can be made with tofu, seiten, soybeans, tempeh, TVP, beans (mostly black beans), or portobello mushrooms.

    Black Bean Burgers
    Ingredients (use vegan versions):
    1 large can black beans
    1/4 cup diced yellow onion
    1/4 cup diced red bell pepper
    1/2 teaspoon ground cayenne pepper
    1 egg substitute
    1 cup seasoned bread crumbs
    2 tablespoon fresh chopped cilantro
    2 tablespoon olive oil
    top w/ salsa, alfalfa sprouts, &/or guacamole

    Directions:
    Rinse black beans. In a large bowl, mash black beans then add onion, bell pepper, cayenne pepper, egg substitute, vegan bread crumbs and cilantro. Blend until all ingredients are mixed well. Form bean mixture into patties and place on a baking pan or cookie sheet (spray pan with non-stick spray). Bake at 350 for 10 mins. Or you can fry them in olive oil. I recommend baking them. Smiley

    Serves: 6, Preparation time: 30
