My husband is fairly picky, and I am totally stumped with this one. Maybe we should just eat two veggie burgers and call it a day.
HELP!
We DO bake the fries, it’s still too many carbs though.
Thanks to everyone for your help. I REALLY appreciate it.

I just had black bean burgers.
My side was cooked spinach with lemon pepper, garlic, little bit of olive oil and a sprinkle of garlic salt. It is so good and simple. I could eat it as a side to anything.
If you don’t have spinach, it also works with broccoli and asparagus and anything like that. Tomatoes are good cooked with a bit of balsamic vinegar.
This could be fun and only takes about 10 minutes.

Um set out more toppings for the burgers like lettuce, avocado, pineapple, french fried onions, olive, grilled peppers, banana peppers, pickles, mushrooms onions. A lot of these things don’t even have to be cut and you could put them on the burgers to make them more filling and more interesting . You could use most of these same toppings to make a salad if they were set out and you’d have things to just nibble on. Set out some different sauces like bbq or guacomole and honey mustard or teriyaki

You could do oven-baked carrot fries instead potato fries. Just julienne some carrots and oven-fry them with olive oil on a shallow cookie sheet. You could also do raw veggies with lowfat dip, or get a pasta salad mix which would be easier than making one from scratch. If you’re grilling your veggie burgers, you could just put some bell peppers, potatoes, and other veggies in a packet of foil and toss it on the grill too.

If you’re grilling, try veg skewers (squash, onion, cherry or mini plum tomatoes, etc). Everyone needs carbs! Helps burn fat, and balance food intake, but, be choosy- complex carbs are healthier than french-fry potatoes cooked by any method. Also, try the patties bun-less, with couscous, or polenta for an exotic change. Both complement vegs very well. Bon Appetit!

It doesn’t get much easier than corn on the cob! I like sliced tomatoes with cottage cheese, sliced melon, or vegetarian baked beans. They’re all good!

We usually have a light pasta salad. Something like tabouli would be good. Or you could just have a side salad. We like spinach with mandarin oranges and sliced almonds topped with balsamic. Fruit salad would be good too.

make your own wedges out of sweet potatoes, peal them cut them in to wedges and sprinkle with the seasoning of your choice you don’t need to drown them in oil just a couple of sprays of oil in an aerosol and bake them in the oven at a high temp until they are cooked.

Guacamole with some corn chips. There are some great store-bought brands of guac, but I have a recipe that’s fairly simple if you want to make it yourself!

I found this amazingly healthy sweet potato fry alternative when I was making our annual vegetarian Thanksgiving feast a couple of years ago. They’re delicious!
Sweet Potato Fries
Ingredients
•2 tb Thawed orange juice -concentrate
•1 t Onion powder
•1/2 ts Salt
•1/8 ts Ground red pepper (cayenne)
•1 lb Sweet potatoes, cut into -1/2″ sticks
Line a cookie sheet with foil and spray with a nonstick cooking spray. In a medium bowl, combine orange juice concentrate, onion powder, salt and cayenne. Add potato sticks and turn to coat. Arrange coated
potato sticks on the oiled foil in a single layer. Bake 10 min; turn carefully, bake 10 more minutes or until tender.
