try some of this, it;’s nice and refreshing and cools you down after a hard day at work. brak some biscuits into some vanilla ice cream and pouring on some melted chocolate, everbody loves it.

go to a used book store and buy yourself an old Betty Crocker cook book, many old recipes in there and not cluttered with exotic ingredients that you have never heard of. I had no intention of insulting your intelligence, you wanted comfort food and old time comfort food usually has ingredients that you have on hand. Sorry you were offended, not my intention.

Forget the recipes. Go to the store and get a bag of Oreo’s and a gallon of milk.

You can’t go wrong with my North Carolina-born mother’s fried chicken:
Fried Chicken – as taught by my mother Helen
1 cut up fryer, skinned (you may substitute legs or ******* only if preferred)
1 cup all-purpose flour (or more)
Salt (to taste)
Black pepper (to taste)
Ground mustard (to taste)
Paprika (to taste)
1 egg, beaten
½ cup ice-cold milk or buttermilk
1 stick of butter-flavored Crisco
Heat a large cast-iron skillet over medium-high heat.
Put flour and the spices in a paper or plastic bag and shake ‘em up. Mix the egg and milk together in a shallow bowl until it is frothy.
Take each piece of chicken and dip in the egg wash. Then place each piece individually into your bag and shake it up until it is thoroughly coated. (One piece per shake.) If you run low of flour/spices, just replenish as necessary.
Melt the Crisco in the hot skillet. As soon as it is totally melted, add your chicken and fry. You can turn the heat down to medium if it is browning too fast.
Turn chicken after 3-5 minutes. Make sure all sides are uniformly brown. Remove from grease and drain on a paper towel.
Good side dishes: mashed potatoes and gravy, peas, string beans, candied yams, greens, salad…whatever you like.
I also like to serve biscuits with fried chicken, but corn bread will do in a pinch. Don’t forget the peach cobbler for dessert.

Here is a basic recipe for a simple ground beef Shepherd’s Pie. We dressed it up a bit with some veggies and Worcestershire sauce.
1 1/2 lbs ground round beef
1 onion chopped
1-2 cups vegetables – chopped carrots, corn, peas
1 1/2 – 2 lbs potatoes (3 big ones)
8 tablespoons butter (1 stick)
1/2 cup beef broth
1 teaspoon Worcestershire sauce
Salt, pepper, other seasonings of choice
1 Peel and quarter potatoes, boil in salted water until tender (about 20 minutes).
2 While the potatoes are cooking, melt 4 Tablespoons butter (1/2 a stick) in large frying pan.
3 Sauté onions in butter until tender over medium heat (10 mins). If you are adding vegetables, add them according to cooking time. Put any carrots in with the onions. Add corn or peas either at the end of the cooking of the onions, or after the meat has initially cooked.
4 Add ground beef and sauté until no longer pink. Add salt and pepper. Add worcesterchire sauce. Add half a cup of beef broth and cook, uncovered, over low heat for 10 minutes, adding more beef broth as necessary to keep moist.
5 Mash potatoes in bowl with remainder of butter, season to taste.
6 Place beef and onions in baking dish. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown nicely. You can use the fork to make some designs in the potatoes as well.
7 Cook in 400 degree oven until bubbling and brown (about 30 minutes). Broil for last few minutes if necessary to brown.
Serves four.

Go to the bookstore & buy a Soul Food cookbook & a Southern cookbook. You should be able to find plenty of things you like between the two. That’s the beauty of southern comfort cooking – you can always tweek the recipe to suit your personal taste……Have fun experimenting!!

Delicious Cream Corn
2 (20 ounce) packages frozen corn kernels, thawed
1 cup whipping cream, unwhipped
1 cup evaporated milk(or use milk)
1/2 teaspoon salt(or to taste)
1 tablespoon sugar
2 tablespoons flour
2 tablespoons melted butter
black pepper(or cayenne pepper)
1. In a large saucepan combine thawed corn niblets, whipping cream, evaporated milk, salt and sugar; bring to boil over medium heat, stirring occasionally.
2. Reduce heat to low and simmer for 5-6 minutes.
3. Melt butter in the microwave or in a small saucepan over low heat; whisk in flour until smooth, then stir into the corn mixture until well blended and thickened.
4. Season with black pepper or cayenne to taste.
