You don’t have to cook it – it will cook through just fine in a slow cooker. However, it tastes MUCH better if you brown it first.

I have always cooked my meat before I throw the veggies in. I actually do the meat while I am sleeping, and when I wake up in the morning, I put the vegetables in. And, when I come home from work, everything is tender and done.

I usually don’t brown my meat before I when using my slow cooker. Just layer with vegys first and then your meat. Slow cooking will cook your meat and it will me very tender. Don’t forget your seasonings.

I always brown meat before putting in the slow cooking. Aside from making it look more appetizing browning means carmelizing the meat. This carmelization adds greatly to the flavor. Once the meat is browned and placed in the slow cooker you can deglaze the browning pan with wine or broth or even water and at that to the slow cooker.
It will simply make it taste better. Just put a couple of tablespoons of olive oil in a saute pan over medium high heat and put your meat in the pan, being sure not to over crowd it. Brown the meat (in batches if necessary) and put it into the slow cooker. While the pan is still hot, add the wine, broth or water and using a wooden spoon, scrape the brown bits from the bottom of the pan. When the bottom of the pan is fairly clean, pour it over the meat in the slow cooker, add you other ingredients and cook as usual.
