  1. Green Chicken Enchiladas

    Bonless skinless chicken – either white or dark whichever you prefer
    1 jar Heinz Chicken Gravy
    1 can Green Enchilada Sauce
    8oz Sour Cream
    Corn Tortillas

    Boil chicken until done using whatever you want to season (I use chopped onion, fresh
    jalapeno, garlic, salt and pepper)

    While that is cooking mix together your gravy, sauce and sour cream.

    When chicken is done, let cool a little and put in a chopper to chop it up.

    You need to soften the tortillas in hot oil. Do not let them get hard. You are just putting
    them in there long enough to make them bubble.

    Spread some of sauce on tortillas – not too much – then add chicken.
    Roll them and place them in a baking dish with seam side down.

    After your pan is full, spoon some of remaining sauce mixture on top of each enchilada –
    but don’t make them soggy.
    Sprinkle with cheese and bake at 350 for about 35 minutes.

    SPANISH RICE
    Heat some oil in a skillet
    Saute some rice just until it is a light beige color
    However much rice you used, you are going to use double the amount in liquid. Ex. 1 Cup Rice to 2 Cups Liquid
    Your liquid can be pretty much your choice. I personally use a homemade hot sauce mixed with water so I have all the onion, chili and tomato in my rice. Reduce temp to low and simmer until liquid is absorbed. Works every time!

    Beans can pretty much be done however. If you don’t eat Mexican food regularly, just buy them already made from a grocery or a BBQ place.

  2. CHALUPAS

    1 lb. ground beef, crumbled
    1/2 med. size onion, chopped
    1 tbsp. chili powder
    1 tsp. cumin powder
    Salt & pepper to taste
    1 (No. 300) can pinto beans
    12 frozen corn tortillas
    3 tbsp. shortening
    Shredded lettuce
    3/4 lb. mild cheddar cheese, shredded
    3 tomatoes, cut in sm. pieces
    Bottled taco sauce

    Heat lightly greased, large skillet. Add the ground beef and onion. Cook until the ground beef is browned. Drain off grease and add the chili powder, cumin, salt and pepper to the meat mixture and mix thoroughly. Blend in beans and their liquid.
    Cover mixture and cook at simmering point for about 30 minutes.

    Heat shortening in skillet and lightly fry tortillas on both sides. Drain on absorbent paper and stack. Keep warm in oven, moderately hot.

    To assemble chalupas, place 2 or 3 tablespoons of the meat mixture on each tortilla. Sprinkle grated cheese over meat then arrange shredded lettuce and tomatoes on top. Serve with taco sauce in a separate bowl. Yield: serves 4 allowing 3 chalupas per serving.

  3. Southwestern Chicken

    2 or 3 boneless chicken ****** (3/4-1lb of chicken) cut into either tenders or bite size pieces
    2 cups instant rice
    1 cups water (the salsa acts as your other cup of liquid)
    1 cup salsa
    1 pkg of taco seasoning
    shredded cheese to your liking
    You can also add black beans, olives, or corn if you’d like.

    Set cheese aside. Throw everything into the pot, put the lid on, simmer until rice and chicken are done, stirring occasionally to prevent sticking. Spread cheese across the top and continue heating until melted. Serve with sour cream and warm tortillas
