How about Swiss Steak or Beef Stroganoff? They’re both good and very easy to make.

Round steak is kind of tough if you don’t cook it long enough and tenderizing it helps, too. Swiss steak is my favorite way to prepare round steak. Here’s how make it:
1 pound round steak
1/4 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon fresh cracked black pepper
3 tablespoons vegetable oil
1/2 cup chopped onion
1 can (14.5 ounces) diced tomatoes
3 tablespoons chopped green bell pepper
Cut steak into serving-size pieces. Combine flour, salt, and pepper; pound into round steak with meat mallet. In a large skillet, brown meat in hot oil. Add onion, bell pepper, and tomatoes; cover and cook swiss steak over low heat for 1 1/2 hours, or until tender. Serve with noodles, rice, or smashed potatoes.
Sometimes I use a can of stewed tomatoes, which already contain onion and bell pepper, instead of plain diced tomatoes and chopping my own onion and bell pepper.

In particular, Alton’s Country Style Steak recipe is to die for. Check it out here:
2 pounds beef top/bottom round, trimmed of excess fat
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3/4 cup all-purpose flour
1/4 cup vegetable oil or bacon drippings
2 cups chicken broth
1 teaspoon dried thyme
Preheat the oven to 300 degrees F.
Cut the meat with the grain into 1/2-inch thick slices and season on both sides with salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour. Tenderize the meat, using a needling device, until each slice is 1/4-inch thick. Dredge in the flour again and set aside.
Add enough of the vegetable oil or bacon fat to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
Remove the last steaks from the pot and add the chicken broth and thyme and whisk until the liquid just comes to a boil. Return the steaks to the pot and make sure they are all submerged in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.

a cut of this type is best served braised!
pound it out with a meat mallet.
sear it on both sides in 450 degree oil.
set it into a baking dish and add the following after you mix it well:
1 can of diced tomatoes, a diced onion, 5 crushed garlic cloves, some red wine, and a handful of Sazon Completa
add a handful of italian seasoning.
bake covered at 225 degrees for 6 hours, or cook it in a crock pot all nite.
serve over rice pilaf!

I have a couple of favorites for round steak –
Swiss Steak
1 pound round steak
1 green bell pepper, diced
1 red bell pepper, diced
1/2 cup chopped onions
1 can (14.5 ounces) tomatoes
2 tablespoon light soy sauce
8 ounces fresh mushrooms
Dredge steaks in flour then brown in skillet. Dice peppers. Put all ingredients into a crockpot. Cook on High for 1 hour; then allow to cook 6 to 8 hours on Low. This can also be cooked in the oven if you prefer. Just brown the steaks as instructed above, put the steaks and additional ingredients into an oven save pot with a lid. Cook at 350F for about 1 1/2 hours. This is great served with rice – spoon the gravy over the rice. YUMMY!
CHICKEN FRIED ROUND STEAK
1 1/2 lbs. top round steak, 1/2 inch thick
1 egg, beaten
1 tbsp. milk
1 c. fine cracker crumbs
1/4 c. cooking oil
Salt & pepper
Cut steak into serving pieces then pound so that it is about 1/4 inch thick. Blend egg and milk. Dip meat in egg mixture then dredge in crumbs. Brown meat in hot oil, turning once. Cover, cook over low heat 45 to 60 minutes or until tender. Season with salt and pepper. Serve with cream gravy and mashed potatoes.

Spicy Round Steak
* 1/4 cup flour
* 1 teaspoon salt
* 1/4 teaspoon pepper
* 2 pounds round steak, about 1/2-inch thick
* 3 tablespoons shortening
* 1 cup ketchup
* 1/2 cup water
* 1 medium onion, thinly sliced
* 1 lemon, thinly sliced
* 1 green pepper, sliced
* 5 whole cloves
PREPARATION:
Combine flour, salt and pepper; pound into steak. Melt shortening in a skillet and brown steak. Place in baking dish. Blend ketchup and water; pour around steak and add onion, lemon, green pepper and cloves.Cover with aluminum foil; place on lower rack of oven. Bake at 350° for about 1 hour.
Serves 6 to 8.
