  1. cook ground beef and add taco seasoning, put it in an ovenproof dish, cover with corn [canned] cover with mashed potato, sprinkle with paprika, bake.
    we called it ‘taco shepherds pie’

    I love this recipe…it’s super easy to make too.

    Bacon Cheeseburger Roll-Up

    1 lb. lean ground beef
    4 slices OSCAR MAYER Bacon, chopped
    1/2 cup chopped onions (about 1 small)
    1/2 lb. (8 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes
    1 pkg. (13.8 oz.) refrigerated pizza crust

    PREHEAT oven to 400°F. Cook ground beef, bacon and onions in large skillet on medium-high heat until ground beef is evenly browned, stirring occasionally. Drain; return meat mixture to skillet. Add VELVEETA; cook until completely melted, stirring frequently. Cool 10 min.
    UNROLL pizza dough onto baking sheet sprayed with cooking spray. Press into 15×8-inch rectangle. Top evenly with meat mixture. Roll up dough, starting at one of the long sides. Rearrange, if necessary, so roll is seam-side down on baking sheet.
    BAKE 20 to 25 min. or until golden brown. Cut diagonally into six slices to serve.

  3. Hamburger Soup
    1 1/2 pounds ground beef
    2 cups diced onion (optional)
    1cup diced potaotoes
    1cup diced carrots
    1 cup diced celery
    3 garlic cloves, minced
    3 (14.5 ounce) cans chicken broth
    1 (15 ounce) can crushed tomatoes
    2 tablespoons Worcestershire sauce
    1 teaspoon hot pepper sauce
    1/4 cup stick margarine
    1/2 cup all-purpose flour

    In a large saucepan or soup kettle, cook the beef, onions, carrots, celery,potatoes and garlic over medium heat until meat is no longer pink and vegetables are tender; drain. Stir in broth, tomatoes, Worcestershire sauce and hot pepper sauce. Bring to a boil. Reduce heat; cover and simmer for 15 minutes.
    In another saucepan, melt margarine over medium-low heat. Stir in flour until smooth. cook and stir for 6-8 minutes or until mixture turns golden brown. Carefully stir into soup. Cover and simmer for 15 minutes, stirring occasionally.
    This recipe is great, especially if it’s cold out.

  4. Here is one that I have made for about thirty years that is still a family favorite. It is a casserole called Chinese Hamburger. I have even made it for company with great success. I usually will add more soy sauce for extra flavor. And I toss in some sliced mushrooms

    Chinese Hamburger Casserole
    1 lb ground beef
    1 (10 1/2 ounce) can cream of mushroom soup
    1 (10 1/2 ounce) can cream of chicken soup
    1 cup water
    2 tablespoons soy sauce
    1 cup sliced fresh mushrooms or 1 (8 ounce) can mushrooms
    1 cup sliced celery
    1 medium onion, coarsely chopped
    1/2 cup white rice
    1 can chinese noodles, crisp

    Brown meat in skillet.
    Add remaining ingredients except noodles.
    Stir well and pour into a 2 quart casserole.
    Cover and bake at 350 degrees for 30 minutes.
    Uncover and bake another 30 minutes.
    Sprinkle noodles over top and return to oven and bake an additional 10 or15 minutes.
    Serves 8.

  5. This is basically a healthy sloppy joe recipe. I am West Indian and love this. And you can add veggies without your kids knowing if you have them.

    There isn’t really a true recipe for this, but I will give you the basics. And you can alter it for your family’s tastes.

    Sautee up some diced veggies. Generally I use 1/2 pepper, 1 small onion and about 1/4 of a cabbage. Let all of these cook low until they are soft, but not brown. Then add 1 pack of ground beef. Let this cook until almost done, then add about 1/4 c. of ketchup and 1/2 c. of water. Let this simmer until the meat becomes thick. Make sure you season the veggies and the meat as you are cooking. I prefer adobo, but salt and pepper will do. I generally add a sprig of thyme to mine as well, but not necessary.

    You can serve this on buns like you would a sloppy joe, on top of rice or my favorite, fried dumplings. There are a ton of fried dumpling recipes out there. Basically it’s just self rising flour, a pinch of salt and water, but it takes a while to get right. Keep on practicing they are well worth the wait.

  6. Ground Beef and Rotel

    1 to 2 lbs browned ground beef
    1 medium can tomato sauce (sorry, don’t know the ounces)
    1 small can rotel tomatoes
    1 to 2 cups minute rice (depending on the amount of ground beef)
    1 bag tortillas
    salt to taste
    pepper to taste
    onion (optional)

    Brown ground beef (may add onion), drain. Add tomato sauce, rotel, salt & pepper. Bring to a boil, simmer for about 30 minutes. Serve over rice. Eat with tortillas chips.

    I serve a salad with this.

  7. Fusion Chili:

    “A true fusion of ‘Tex’ and ‘Mex’ style chili. I’ve made this recipe dozens of times, and it is great. Each bite slowly delivers a sweet flavor followed by dry heat afterwards. It takes a while to prepare, but well worth it. You can use any type of beans you like, and try different dried chile varieties.”

    INGREDIENTS
    10 dried ancho chiles – chopped, stemmed and seeded
    1/2 cup water
    1/4 cup white wine vinegar
    3 pounds hot Italian sausage, casings removed
    3 pounds ground beef
    1 white onion, diced
    1 red onion, diced
    1 sweet onion, diced
    1 cup diced celery
    1 cup diced carrots
    10 cloves garlic, sliced
    1 teaspoon salt
    1 teaspoon black pepper
    1 (6 ounce) can tomato paste
    1 cup dry red wine
    4 (14.5 ounce) cans diced tomatoes
    1/4 cup Worcestershire sauce
    1/4 cup hot pepper sauce
    1 tablespoon chili powder
    2 teaspoons ground cumin
    1 tablespoon chopped fresh parsley
    1/2 cup honey
    1 (16 ounce) can kidney beans, drained
    1 (16 ounce) can pinto beans, drained
    DIRECTIONS
    In a small bowl, soak chiles in water and vinegar for 30 minutes. After soaking, puree in a blender or food processor until very smooth, about 5 minutes; set aside.
    Place sausage and ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Remove meat from pan, and set aside. In a large pot, Heat 3 to 4 tablespoons of the meat drippings over medium heat. Saute white onion, red onion, sweet onion, celery, carrots and garlic until onions are soft and translucent. Season with salt and black pepper. Stir in tomato paste, and allow to caramelize. Pour in wine to deglaze the pot, scraping up any bits stuck to the bottom.
    Stir in cooked meat, tomatoes, Worcestershire sauce and hot pepper sauce. Season with chili powder, cumin and parsley. Bring to a boil, then stir in blended chile mixture and honey. Carefully mix in kidney beans pinto beans without breaking them. Cover, and simmer for 3 hours. Stir and scrape the bottom every hour or so.

  8. Easy Italian meatloaf
    2 1/2 lbs ground beef or chuck ,2 large peppers red or green chopped,1 16 oz can of diced tomatoes,1 large sweet onion ,chopped,4 slices of bacon ,1 and 1/2 c of Italian breadcrumbs,1/4 c grated parmesan cheese,2 tblsp minced garlic,1/2 tsp basil,1/3 tsp oregano,1/3 c chopped parsley,1 tsp season salt, 2 eggs,1/3 tsp ground black pepper, 1/3 c of ketchup,onion and garlic powder to taste . Preheat oven to 375. In a lrg bowl combine meat,eggs,seasoningsand remaining ingredients except ketchup and bacon,adding breadcrumbs to mixture last. If meat is low in fat add up to 1 tblsp olive oil. Mix well . Press meat into a loaf shaped pan, forming a dome shape. Brush top with ketchup and sprinkle with onion and garlic powder ,salt and pepper. Cover with bacon slices. Baste occasionally with additional ketchup during cooking ,being carefull not to allow oven to get cold or additional cooking time will be required . If desired cover with thinly sliced onions. Bake uncovered for 1 and half hrs.
