Wrap the breast in bacon(with the fat removed).
Cook in the oven for about 25 minutes then put some chopped tomatoes on top and cook for another 10 minutes or so.
Check they are cooked through and season a little.
If you have any cheese allowance for the day melt a little mozzarella over them too.

Brush a chicken with a little olive oil, season with salt, pepper, and cumin. Put it in your broiler and cook for 5 minutes. When you turn it over, lay some sliced red bell peppers and onions on the broiling pan. Cook for another 5 minutes, or until the juices run clear. Serve in a corn tortilla with salsa, and reduced fat sour cream.
You could also stir fry thinly sliced chicken breast in a pan, and add a ton of veggies, like mushrooms, bean sprouts, snow peas…add reduced sodium soy sauce, garlic, and ginger..serve over brown rice.
Chicken piccata is yummy…pound your cutlet thin, then brown in a little oil (it should only take a couple of minutes per side.) Remove chicken, and sautee some chopped shallots in the drippings. Add sliced mushrooms, and when tender..hit the pan with white wine. Cook for a few minutes, until the sauce reduces, and add a dab of butter, and parsley…pour over chicken.

Bake about 2-3 breasts for 45 mins or so until their done. Cut them up and put them on the bottom of a casserole dish. In a separate bowl mix together Cream of Broccoli Soup (or any cream soup), raw broccoli pieces, asparagus, mushrooms, peas, etc, half cup of milk, a little shredded cheese. Pour over top of chicken and mix together. Make some stove top dressing…..or your own seasoned bread crumbs. Pour on top of chicken mixture and cook in oven for a 1/2 hour at 350.

SJ-SC-CA Incredible Chicken Salad
3 cups chicken breast (cooked and cubed)
1 cup pineapple (diced)
1/2 cup celery (diced)
1/2 cup mayonnaise
1/4 cup raisins
1/4 cup walnuts
1/8 cup dried cranberries
2 Tablespoons sweet onion (minced)
2 Tablespoons apple juice
Combine all ingredients in a bowl until well combined and chill. Serve with a lettuce garnish.
***You can use the chicken salad as a sandwich filling.***

Here’s a recipe I love: Asian Orange Chicken:
Ingredients:
1/8 cup Light Soy Sauce
4 tsp. Sesame Oil
2 T Honey
1 T Fresh Ginger (chopped fine)
2 cloves Fresh Garlic (chopped fine)
1 pound Boneless, Skinless Chicken Breasts (4 – 4oz. breasts)
Combine half of the following ingredients: soy sauce, honey, sesame oil, ginger, and garlic with chicken in small dish or bag and marinate for up to 1 hour in refrigerator. Heat the other half in a small sauce pan until boiling then reduce heat and simmer for 5 minutes. Grill chicken over medium-high heat until center is no longer pick (around 8 minutes per side, depending on the thickness of the chicken). Baste with sauce from pan frequently and serve.
Serves 4.

I’ve tried many recipes from this website and very happy with the results. The recipes are very healthy yet did not compromise the taste, very easy to prepare too… yummy !!
Most importantly, I need not worry about my waist line anymore.
Hope you can find recipes that you like from this website.
